"White chocolate chex mix"- which is what we called this in my house growing up, is one of my all-time favorite snacks/desserts. It's seriously addictive. My family makes this every year around Christmas time and it's always a hit. My mom even puts it in cute baggies and hands them out as gifts to family members (best gift ever in my opinion). This is one of those recipes I'll be making every year for the rest of my life.

This sweet and salty mixture is made up of pretzels, corn chex, cheerios, peanuts, m&m's, and white chocolate. It's your everyday chex mix with a little something extra! It doubles as a mid-day snack, but also as something sweet for a dessert. You could eat it for breakfast and I wouldn't judge you one bit.

Ingredients needed for this white chocolate chex mix:

This is your typical chex mix recipe, but just to point out a few things below:

  • Chex cereal- you can use corn or rice chex for this recipe!
  • peanuts & pretzels- I get salted for both of these to really give you that salty/sweet combo you're looking for here
  • white chocolate- I use plain old white chocolate chips for this recipe because they're easy to find
  • oil- canola or vegetable oil work great

Step by Step Instructions

Step 1: Combine pretzels, cheerios, corn chex, peanuts, and m&m’s into a VERY large bowl. If you don't have a big enough bowl, use two and put equal amounts of each ingredient in both bowls.

Step 2: In a microwave-safe bowl, microwave chips and oil on medium-high for 2 minutes. Stir, and then continue to microwave in 10-second intervals until completely melted and smooth.

Step 3: Pour white chocolate over cereal mixture and mix well with a rubber spatula or clean hands.

Step 4: Spread out over 3 parchment paper-lined baking sheets and let cool completely. Break apart and store in an airtight container.

How much does this make?

This recipe makes A LOT of chex mix, but I promise it's never enough. Typically it makes enough to fill 2 large gallon-sized ziplock bags.

Can I split this recipe in half?

Yes! Just cut each ingredient in half. I do this all the time if I don't want to make a ton.

My white chocolate didn't coat the chex mix very well.

You want to be sure of 2 things- that you don't burn the white chocolate while melting it, and that you work very quickly once it is melted. pour the white chocolate over the chex mix and immediately starting mixing it so that it doesn't have time to cool.

Tips and tricks

  • Change the theme for different holidays- use green & red m&ms for Christmas, red white and blue for 4th of July. You can even add 3-4 tablespoon of colored sprinkles to make it extra festive.
  • Use the biggest bowl you can find- sometimes I have to split this up into 2 bowls if I don't have one big enough.
  • Use your hands- I find that mixing the white chocolate into the chex mix works best if you use your hands vs. a spatula. Gives you a nice even coat, so don't be afraid to get your hands a little dirty!
  • Use parchment or wax paper- this is the easiest to use if you don't want your white chocolate to cool and stick to whatever you put it on.

Storing & freezing

This chex mix can be stored in an airtight container or ziplock bag for 2-3 days at room temperature (as long as it's not too hot inside, it is chocolate so it will melt if too hot).

It stays best if kept in the freezer where it'll stay fresh for up to 1 month. I typically make a batch and put it right into the freezer and just serve it straight from there!

Ingredients

  • 1 package (10 oz) mini salted pretzels
  • 5 cups cheerios
  • 5 cups corn chex
  • 2 cups salted peanuts
  • 1 lb (16 oz bag) m&m's
  • 2 packages (10 oz each) white chocolate chips
  • 2 tablespoon vegetable oil

Instructions

  • Prep your parchment paper before starting- you can either lay it out on the counter or cover 3 large baking sheets and set aside.

  • Combine pretzels, cheerios, corn chex, peanuts, and m&m’s into a VERY large bowl. If you don't have a big enough bowl, use two and put equal amounts of each ingredient in both bowls.

  • In a microwave-safe bowl, microwave chips and oil on medium-high for 1 minute. Stir, and then continue to microwave in 10-second intervals (mixing in between each) until completely melted and smooth. Be careful not to burn the chocolate.

  • Quickly pour the white chocolate over cereal mixture and immediatly mix to coat everything with a rubber spatula or clean hands.

  • Once coated, spread the chex mix out in an even layer on the prepared parchment paper and let it cool completely. Break apart and store in an airtight container.

    Can I use vanilla almond bark in place of the chips for this recipe?

    This is a great go to recipe loved by adults and kids alike. I usually make large batches for Christmas and it is always a big hit. For July I found myself hosting or attending 3 family inclusive events within 2 weeks and I kept trying to figure out something fun and different to bring. I just made a double batch which I will take to a family reunion and serve at a surprise birthday party and engagement party I am hosting.I know this will be a different and fun snack for all events. I used 12 ounces white chocolate chip bags and added an additional 2 tsp of oil. I melted in the microwave at full power for 30 seconds initially then at 20 second increments stirring really well each time. My white chocolate was usually done after 1 minute 30 second. Make sure to really stir because it keeps melting while you are stirring. I used the ingredients as listed initially then I used the rest of the cereal about 1 cup each and a couple handfuls of pretzels peanuts m&ms left over with 1 12 ounce pkg of white chocolate 1 tbsp and 1 tsp oil. It came out great and I have no partial boxes of stuff left over. This is so easy to make but does generate quite a few dishes- large bowls cookie sheets measuring bowl measuring spoons stirring scrapers but it is done within 30 minutes. Highly recommend this recipe. Your family guest will love it

      Hi Jennifer! Yes, white chocolate chips are the same thing as white chocolate baking chips. You can find them in practically any grocery store in the baking aisle!
