I’m Italian and I absolutely love Spanish Rice and Beans. When I was a young girl, our neighbor who I babysat for and was PR always made Rice and Beans and would always send me in a bowl because she knew I loved it so much. She told my mother it is made the same way we did Pasta fa*giule, but of course when Mom made it, it came more like soup LOL. Anyway, a co-worker gave me her recipe quite similar to the one above. I made it and it came out delish. All the recipes above look mouth watering and I will make sure I come back to this site for the recipes.
